PICKING OUT THE FRESHEST PRODUCE
Whoever said you don’t make friends with salad was sorely mistaken. We make friends, best friends even, when we press fresh, locally-sourced fruit and vegetables into cold-pressed juice. From the Sunshine Coast to Northern NSW, our produce is picked out by farmers and sent to our local produce vendors and markets that, after careful selection, make their way over to us. So, when we say fresh, what we are saying is – our kale crunches in your hands, our strawberries blush, our beetroots perfume the Pressery with the smell of the earth and our sweet, sweet oranges, like balls of sunlight you can’t look away from.
imPRESSING JUICES
Kitchens aren’t about size, machinery or utensils but rather the people, the colours and the music that fill such a place. Our commercial kitchen isn’t light-laden and gloriously spacious, but it makes the best tasting juice in the world, and what it might lack in aesthetic, it makes up for in character. Juicing seems straightforward – wash, cut, squeeze and bottle, right? Something about lemons and lemonade? Well, if it were that simple, we would have monkeys driving our production line.
The way we press our juices to ensure that all the living proteins and enzymes retain their prebiotic benefits to promote and sustain good gut health. Unlike blending fruit and vegetables, cold-pressed juice is never exposed to heat during the juicing process, which is how we can preserve the fibre, nutrients and more of the fruit’s natural goodness.
It’s a process that requires a little TLC, but it’s worth every second to deliver you the best of the best, freshest of the fresh, highest quality juice in all the land.
Cold-press juicing comes down to two things, precision and taste. What might seem insignificant, like an extra 3mL of lemon, lime or ginger, could ultimately mar the flavour of a juice and result in us recalculating the recipe and pressing more of another ingredient, or worse, start over. On a perfect day, perfect measurements result in perfect taste. On a not-so-perfect day (like when our pineapples are green and bitter), perfect measurements might not make the perfect juice, so we step into our lab coats and become micro-mixologists, pouring until we get an extraordinary flavour that remains consistent with our big-smiles-guaranteed quality.
WHAT’S COOLER THAN COOL?
Another lesser-known but integral factor to not only the taste but the benefits of living juice is keeping every part of the product cold. As soon as we receive our produce, it is refrigerated until we need it for pressing. Our Pressery is just one giant fridge (we’re not joking) to ensure the juice is constantly kept to temperature before being placed into actual fridges. Now, if you thought you would never have to see the word fridge again, you are wrong. Once the pressing is finalised, we pour the yield into (you guessed it) refrigerated bottles #FrostedAndThriving, box up your order and place it into our…refrigerated cold-press xpress van, ready for delivery.
I ref*cking kid you not, that is our process, and I vow to never type out the F word, ever again.
